Sugar is often used for sweetening purposes only. In reality there are extraordinary sugars that add aromas as well as nutrients. These chocolates are made with the same cacao, in equal proportions. When the sugar is changed the flavour changes as well. Unrefined brown sugar only, of different origins, and different processing methods. All extremely aromatic. Two from sugar cane, one extracted from coconut palm flowers.
